So my sister and I got Dad a bread machine for his birthday. It was my idea, because I’m tired of hearing him complain about how he can’t find bread that he will eat – he is on a low-sodium diet (except when he cheats and eats cheese or smoked fish), and some goofball variation of Sugar Busters diet, which apparently means he can’t eat anything white or refined; no potatoes, white flour, refined sugar, etc. And then there’s my stepmom, who, because of various medical issues, has been on a gluten-free diet for a while now. Between the two of them, it’s just about impossible to come up with a meal that isn’t some variation on plain boiled chicken.
So Dad spends half his life hunting for bread in health food stores, which is all fine and dandy, except that there is usually only one loaf that meets all his criteria, and then it costs $7 and has been sitting in the freezer for 6 weeks. I thought the bread maker would be a great solution – takes about 90 seconds to assemble the ingredients and dump them in, and then you just press the button, and presto! Fresh bread!
Of course, God forbid an engineer should read the manual, which comes with a recipe book – so does anyone have bread recipes that meet some or all of these criteria?
- Low sodium (not that bread is terribly high-sodium to begin with)
- Whole-grain
- Gluten-free
If they aren’t designed for a bread machine, no worries – I will be at Dad’s this weekend, and can show him how to adapt recipes for the machine.
