Making baby back ribs, looking for recommendations

Saturday I’m cooking baby back ribs. As usual I am using Alton Brown’s recipe. I’m looking for recommendations for accompanying dishes. This is a sit down dinner not a BBQ. Right now I’m drawing a blank.

Nothing too labor intensive please. The ribs take enough time to prepare I don’t need another big project.

Coleslaw, potato salad, baked beans. Whether it’s a BBQ or not, those three always worked with baby backs.

That works for me but probably not the kids.

How about corn? On the cob or off, or corn bread?

OK, then gives us some guidelines to help. Cornbread or corn, as mentioned above, is a good suggestion. If I’m working the grill or the smoker, I usually get some grilled veggies going, as a rule. Bell peppers, onions, mushrooms, asparagus, squash, etc. Whatever is around and in-season and seems to go together.

Mac and cheese? What kids don’t like mac and cheese? That’s another classic side. I also love doing greens, but I suspect with the kid stipulation, that might not be in the cards.

How about a waldorf salad? It’s pretty easy to make. It’s light, fruity, and chilled, so it’ll match up good with ribs. And it’s something kids would like.

I was thinking along those lines for one of the sides. I’ll probably go that way.
