If a recipe calls for me to knead dough from 12-15 minutes by hand and if I use a standup mixer with a dough hook, would I run the machine for the same amount of time?
I wouldn’t. Having kneaded bread by hand for about 35 years, I got an electric mixer about a year and a half ago and have used the dough hook since. Everything is by feel and I think I do it for about half as long, generally speaking. There is a bit of hannd kneading at the end because it does not feel quite uniform. I think it is possible to overknead.
I completely don’t know, but I have this anecdotal evidence: in the Alton Brown pizza dough recipeI have been trying recently, he specifically says that if you knead by hand instead of using the stand mixer with dough hook, then you need to knead for twice as long.
Well, I decided to RTFM for my mixer and it said that 1 minute in the mixer is the same as 12 minutes by hand.
