Meals for a blizzard

I made some tuna casserole and some chili gumbo. We have a gas stove, so if the power goes out we’ll be able to heat those things up pretty easily.

My advice is probably not timely for this storm, but speaking as someone who lives in an area that suffers frequent lengthy power outages and occasional impressive snow storms…

The first thing I do is grind as much coffee as I think I’m going to need until power is restored. 2-4 days depending on the storm.

Next, I always roast a chicken. Easy to eat both cold and hot, can be used to make sandwiches and/or soup. Lasts for a couple of days (in my case, longer) – which is usually more than enough time for power to return. Chicken soup is always a comfort.

I also hard boil (or steam, in my case) eggs and lay in a good supply of string cheese, fresh fruit and prepared fresh vegetables such as stick carrots, celery, olives, grape tomatoes.

Altogether, these staples make for quick mix-n’-match meals eaten with or without utensils and minimal cooking.
