Mexican TV dinners

That being said, I’ll occasionally buy a Hungry Man Mexican dinner if I don’t feel like cooking or stopping at Memo’s (best Mexican food in the PNW) on my way home from work.

Back in my bachelor days, my roommates and I would call the Hungry Man dinners Hungry Fucker.

I haven’t even thought about getting a Mexican TV dinner in years. Grew up with them (and the chicken, and the ‘Salisbury steak’, and others). Now that I’m thinking about them… Um… Yeah. They’re OK if you want fuel that is quick and cheap and doesn’t taste bad. But I’d rather go to Taco Bell… and I’m not very keen on Taco Bell.

Last time I made enchiladas, it was with machaca. The time before that, it was with some leftover chicken. I make ‘traditional’ enchiladas, where the tortillas are dipped in sauce and then filled with meat. The SO makes what I call ‘enchilada casserole’ with chicken and white sauce and cheese and stuff. I never think to make cheese enchiladas. Might have to.

The Don Miguel El Charrito dinners are just…amazing. I live in Mexico…I mean, SoCal, just north of the border…anyway, my sweetie got these just for giggles a couple of times, and holy shit…they smell awesome, and taste embarassingly good for cheap, frozen mexican-style food. The sauces are amazing, and the red ones taste like they have a mole base or something. Damn good for cheap stuff! Now we get them on purpose; we just don’t tell his family we’re eating them.

I like these too, but you have to be careful how you microwave them.

I’m thinking about turning the whole thing upside down in my mini 8" electric skillet to heat them up and flip it like a pan cake till it’s done.
