Meyer Lemon recipes please

I bought a bag of Meyer lemons today. It was marked down to 99 cents in the “ugly produce” bin at the store. You gotta be careful with the ugly produce bin at this store because sometimes the stuff there is moldy but I didn’t see anything at all wrong with these so I bought them.

I know in my hundreds of cookbooks I have some Meyer lemon recipes but I want to know what the Dope uses them for. Savory or sweet, doesn’t matter. Please share!

Meyer lemons make great marmalade. Here’s a recipe.

I just eat the damn things by the thin slice. None of the acidity of regular lemons. They also make a hella lemonade since you really don’t need much sugar.

pickled meyer lemons are to die for. But it takes a while to make them. But it’s really really worth it.

Maybe a nice lemon tart?

The above recipe is for Ponderosa lemons* but probably would work for Meyer lemons as well.

*I have several of these enormous lemons ripening on an indoor tree and hope I can convince the master baker (that didn’t come out sounding right for some reason) to make a tart out of them.

I took some of your advice and just cut one up and ate it as is. Yum! I wondered if pickling them was worth the effort, sounds like it is. There were two more bags of lemons in the ugly produce bin, I’m considering going back to the store today to see if they’re still there. There were only five lemons in the bag I bought so not quite enough to pickle or preserve but if I can get my hands on some more I might give it a try.

Thanks for the thread. We have one Meyer lemon tree and I think this year alone it has produced all the lemons this country may need for the next fifty years. I brought several boxes to work and gave them away, tried to feed some to the goats, but eventually left them to rot. A neighbor offered to teach me to make limoncello, which I don’t care for, and anyway that only uses the zest. I could squeeze the juice into ice cube trays and save it, only I still have the ones in the freezer from last year.
