Our local Middle Eastern restaurant serves “Damascus bread”, which Allrecipes and Epicurious have never heard of. It’s flattish, and not unlike a pita in thickness, but much lighter, with big air bubble-pockets. Comes small or large.
I figured it couldn’t be too hard to make, but my big Middle Eastern cookbook didn’t have anything like it, and neither did my usual Internet sources. We want something that can come fresh out of the oven and scoop us up some tasty stuff. Any ideas or reccommendations? (I’m a pretty good cook but inexperienced with breads and such.)
