Mmmmmm . . . soup

Oh man oh man oh man oh man oh man . . .

For absolutely no recognizable reason, I woke up this morning and decided to make beef soup in my crock pot. Maybe it was the fact that I opened the cupboards, only to see cobwebs. Perhaps it was the plethora of frozen foods in my freezer [sub]where else would they be?[/sub]. Maybe it was the hangover. . .

But anyway, I took two bags of frozen vegetables, some salt, pepper, basil, oregano, parsley, a 1/4 cup of Worcestershire, and a dash of garlic powder, and threw 'em all in the crock pot. Now, as soon as my steak is done defrosting, I’m gonna cut it up into chunks, throw them in there, and let it crock.

Dude, I am soooo looking forward to dinner. I wish I had some mushrooms I could throw in there, tho . . . I wonder if the canned ones will work.

Always trust the fat kid when he’s talking about food.

Unless he’s Japanese!!

Natto bean soup

Mmm soup sounds good. But we had that for supper last night.

Thursday night was soup night at my house because my sister was visiting from Wyoming.

1 cup onion
2 Tbs butter
1/2 to 1 pound diced cooked chicken
2 of those boxes of chicken broth (I don’t know the number of oz off the top of my head. Use homemade if you’ve got it!)
4-6 oz blue cheese
8 oz cream cheese
6-10 oz diced spinach (or shredded or julienned)

In stock pot, sweat onions in butter. Add chicken. Add broth. Bring to simmer. Reduce heat. Add blue cheese. Stir until melted. Add cream cheese. Stir until melted. Remove from heat. Add spinach. Stir. Serve.

I’ve just finished two bowls of my soup, and let me say one thing: my jeans don’t fit.
Oh, my, God is this good stuff. ::burp::

The Worcestershire sauce makes this soup.

Mmm…I made home made Cream of Asparagus soup for supper tonight! Yummy! And had some hot sourdough rolls to go with it. Double yummy!

Now ya got me all inspired to make Icebox Soup, which is just what it sounds like. I dumped a bag of frozen Mexican Vegetables into the crockpot, added the remainder of a box of chicken stock, 2 bottles of beer, 3 diced chicken breasts, some garlic and peppers and spices, a can of Ro-Tel and a cup of rice. By tomorrow it will be SOUP!!!
