I’d been saving all my old bananas in the freezer for a day such as this. With Thanksgiving coming up, I decided to go ahead and make a big 'ol batch of banana bread - three loaves, to be exact. It’s been baking for about 50 minutes right now, and the wonderful aroma has filled the house.
Later on today or tomorrow, I’ll be making pumpkin bread - with freshly shredded pumpkin. I made this particular recipe last year, and it was really nice - dense, moist, not too sweet, and textural - due to the shredded pumpkin (instead of canned or cooked).
Mmmmmmmmm. Baking.
