MMP: How to make Gravy

Forgot to mention earlier, that to DH, the stuff that cooks for several days is gravy, but the stuff that comes in a glass jar from Safeway is sauce.

It’s finally warmed up to more or less normal here, and the bank of lights on the other side of this floor that didn’t come back on are now on.

Peas. Forgot to mention peas. I add them still frozen to everything just before throwing stuff in the oven.

I’ve eaten the casserole with a side of green beans now and am sipping a nice beer (that’s the holiday celebration part). Watching the beginning of Gosford Park right now, but I’m not sure I’m really in the mood for it. I haven’t seen it since it was in theaters. I think I’m more in the mood for something light and funny.

I have an ice pack on my shoulder; it’s been hurting a bit lately and it only occurred to me today that it’s because of my new purse. It’s heavier than the old one and I carry it around quite a bit. Guess I’ll have to change back for a while at least.

Hey, great MMP, but dude - is that 3:25 AM your time or Pacific time, and did you set the alarm or just have bad insomnia, or maybe drank too much Dr. Pepper or didn’t look at the clock and just kept reading or shopping online…Anyway, the whole gravy vs. sauce thing has me skeeved out. I don’t think I can eat anything tonight, alright just a piece of dry toast if you insist. Gravy??? That’s just wrong in so many ways.

I am now convinced that MMP actually stands for “Mind Meld Probable”.

Why?

Because we had tuna noodle casserole for dinner!

I am reading a very interesting book titled, Money: A Memoir all about money and the secret deals women make to not become fiscally responsible. I don’t think it holds true for all women (and the author says that repeatedly) but I do see some of my more lackadaisical habits in the book. Ugh. It’s not proclaiming women as victims, but does expose certain assumptions and notions about money and the socialization of women in America. Interesting.

Off to work tomorrow.

I am avoiding housework. Soon I should tidy, but right now I’m reading through my collection of Straight Dope quotes, and I’m going to dump a few in here for massive appreciation.

Dinner is cooking. It’s roast potatoes, and chicken with garlic. I might try roasted some random veggies, too. We’ve got carrots, rapini, green beans, and eggplant. The worst they can do is burn.

We got an eggplant! It just looked so plump and purple and shiny. Now, what to do it… Fry it up, I thought, and add it to the chicken and veg casserole.

Holy olive oil, they weren’t kidding about that “absorbs oil” thing. I dumped it a generous glorp of olive oil and the eggplant just drank it all up.

I’m not sure if I was supposed to peel it or not. Hm. However, the Adventures in Vegetables continue on!

For some things you peel eggplant; for others, you don’t. You reduce the chance of it being bitter by salting it generously before you use it, letting it sit and then rinsing it off some.

Hey rigs - that was scary. I’m sure it was my turn to make tuna casserole. You musta read the schedule wrong.

I switched from Gosford Park to Sleepless in Seattle, which I hadn’t watched in a really long time. It’s a little bit too schmaltzy in some spots, but there are some parts that are actually quite funny (I’d forgotten). And now, for dessert, I’m going to have an episode of Firefly. Shindig, I think.

I have to go to work tomorrow!!! Arghhhhh. Really needed a longer long weekend. (Does this sound familiar?) Need to get up early and order my brother’s birthday present. His birthday is tomorrow, but he’s not home till Friday or Saturday, so it should still make it there on time. (We’re never on time when it comes to presents anyway…)

You know what we call spaghetti covering stuff here in Cincinnati? Not “gravy”, or even “sauce”. We call that stuff you put on spaghetti “chili”. It’s not really chili, since it’s all sweet and not hardly much spicy at all, but there you go.

You can also get goetta here in Cincinnati. (Goetta is like a pork-based haggis. Only better!)

But, technically, I’m not in Cincinnati anymore. But I still put “chili” on my spaghetti (The Little Woman puts ketchup on her scrambled eggs. That just ain’t right.) and I like some goetta now and again.

I should have salted the eggplant; several recipes indicated that. Next time! (I still have half an eggplant to play with.) How cool is it that no matter what food one brings home, this marvelous machine will spit out thousands and thousands of recipes for it? One day I’m going to flummox Google by typing in something like… Well, I can’t think of anything weird enough. Maybe durian + eggs + macaroni + recipe, just to see if there is one.

It must be the week of unsettling dreams. I had a bad one on Sunday afternoon during an unplanned nap. Ugh. I hope tonight I dream about something like fluffy bunnies and shopping.

I am still waiting to see if I am going to be Casey the Dog’s new mum.

It’s Snakes Cat Lady - “Snakes” for my beloved Columbus Cottonmouths, the defending Southern Professional Hockey League Champions. “Cat Lady” for my working in feral cat TNR and rescue, fostering any kittybabies that have no where else to go, and my own herd who are spoiled so badly they have their own suite.

Maybe I need to change the way my name is typed. Or maybe I just need to find another board. Time will tell.

My stomach hates all of you. I was just sitting here, thinking about how much I want something that comes from somewhere other than a college dining hall, and how much I wish I had a kitchen, and you all go on and on about cooking this wonderful stuff?

In other news, yesterday I literally froze. Well, partly, anyway. See, I really needed to wash my hair, and I don’t own a hairdryer (it does bad, frizzy things to my hair). And soon after I took my shower, I needed to be across campus. Partway there, I reached up to brush my hair out of my face, and realized it was really stiff. Then I realized the stiffness was caused by ice. I had icicles all over my head!

It’s been a crazy day, and I am just checking in before getting myself to bed. I need to thank you fairychatmom for the recipe, I can easily substitue west coast crab, it looks like dungeness would suit, but I will probably try it with either tanner (snow crab to you Outsiders) or king crab. Yum! Please allow me to share a wonderful winter chowder that the entire family loves, particularly on a cold winter evening:

Seafood Chowder

6 ounces slab bacon, cut into 1/2-inch pieces
2 tablespoons butter
2 large onions, diced (about 4 cups)
1/4 cup flour
2 cups clam broth or juice
4 white potatoes, peeled and diced
2 sweet potatoes, peeled and diced
1 1/2 teaspoons thyme
Salt and freshly ground black pepper
1/2 pound shucked clams
1/2 pound halibut, cut into 3/4-inch chunks
1/2 pound medium/large shrimp, peeled and deveined
1/2 pound scallops
1/2 pound shucked oysters
4 cups half-and-half
Fresh parsley, for garnish

In a large stockpot over medium heat, cook the bacon until browned. Add the butter and onions, and cook for 10 minutes. Add the flour and stir until well combined. Add 2 to 3 cups broth. Then add the potatoes, thyme, pepper, and salt and bring to a simmer. Cook until the potatoes are almost fork tender, about 10 minutes. Add the clams, halibut, shrimp, scallops, and oysters and simmer for 10 minutes. Add the half-and-half and heat through (do not bring to a boil or the chowder will curdle). When finished add parsley and serve.

I suppose I should order the brother’s present and get started on my day! It’s supposed to be sunny and 40, so that should make it easier. Of course, it’s currently colder and cloudy…

Oh and Rue, I like ketchup on eggs too. I’m extra bad and put it on my version of huevos rancheros. Corn tortillas, fried eggs, ketchup. Yum.

How about Snakes? Would that work? All the recipes sound yummy! Sometimes I think we need a MMP cookbook. I’ve had goetta. I liked it. I’ve had Skyline chili. Ick! See, when I’m somewhere and there’s something regional I’ve never had, I’ll find me some. I cannot understand people who won’t try stuff from different parts of the country or world. Heck, if all I ever wanted to eat is just the stuff I can get at home, I’d just stay my hiney home. How elese would I know that goetta = good and Skyline chili = ick otherwise? Dare to be different people!

Last night I made an ooey gooey King Ranch Chicken casserole. Muy bueno! Tonight we’re having shrimp stirfry.
