What's for dinner?

Looks like the last ‘What’s for dinner?’ thread was back in August. So… What’s for dinner?

I’m feeling lazy tonight. I mixed some tarragon with mayonnaise and coated a couple of cod fillets, then put bread crumbs on them. I’ve just put them into the oven. On the side, I bought a flat package of cut asparagus, red onions, and mushrooms, which I’ll sauté.

Thanks to Costco, which sells packages of premade crepes. I can make them from scratch but haven’t done so for many years; these days I just don’t have the patience.

Hamburger Helper, Beef Noodle flavour. Extra pasta added.

Chili cheeseburger, with a simple (lettuce, tomato, celery, radishes) salad on the side.

Yum.

Crêpes are so easy, I never even considered there were pre-made ones. Besides, it’s fun flipping them in the pan. :stuck_out_tongue:

Tell me more about the filling.

Pernil asada, habichelas guisadas y arroz blanca. Y’all do not know what you are missing.

Baked chicken wings with a habanero aeoli for dipping, garden salad dressed with fresh squeezed o.j., almond oil, soy, herbs. And many margaritas, that part of dinner has been going since lunch…

Japanese curry - YUM!

Almost what I made tonight, but I have to make a dent in this pot of chili I made yesterday, so chili mac it was!

Decided to do a healthy month for February, so grilled snapper and a barley-Lentil side tonight.

Pot roast here tonight. Cooked up a chuck roast with some Yukon Gold potatoes, tri-color carrots, onion and one tomato that I needed to use up. Also made an ice cream cake since it’s my birthday tomorrow and I didn’t want a store-bought cake. Chocolate with strawberry ice cream and crushed chocolate wafers in the middle. It was the first time I’d made an ice cream cake and it came out pretty well.

I’m usually cooking for 3 or 4 people so not having to cook 10-12 crepes makes a big difference.
Filling: salmon fillet sauteed in butter and broken up into small pieces while sauteeing with sliced baby bella mushrooms, a dash of lemon juice, steamed frozen asparagus cut into 1 inch pieces, bechamel sauce.

Steak fajitas and salad…

Spaghetti, topped with torn-up roasted orange and yellow bell peppers, blanched broccoli, and shrimp. The shrimp were first sautéed in olive oil with a couple pf bay leaves, some crushed red pepper, and roughly half a ton of garlic. Add a bit of sherry at the end, and dump the whole thing over the spaghetti. Add a bit of parm, dump in a bowl, and enjoy!

Vegetable korma curry on steamed cauliflower and broccoli ‘rice’.

Chicken Qaurters rubbed with various herbs and seasonings then drizzled with Western dressing and baked in the oven. They was delicious!

Last night: pan seared halibut, spiced with smoked paprika, garlic on top of creamy polenta and fresh salad. It was wonderful.

Cheeseburgers and fries tonight, last night we had pork chops, sauerkraut, mashed potatoes and green beans.

Tonight I’m thinking sous vide double-cut bone-in pork chops, stewed green beans and tomatoes, and fried potatoes.

I generally make about eight.

The filling sounds good. I think I’d leave out the asparagus, and use crab instead of salmon. But that’s just me.
