I regularly have a sandwich that consists of bread, fried egg whites, american cheese, and mustard. It is so delicious. I want one right now, in fact. Mmmm…eggs and mustard.
A small dollop of brown or poupon mustard beaten in with scrambled eggs is da bomb.

I came in here to post about this!! My mom is German, and this was a favorite of mine. We had it with the hot mustard sauce served over boiled potatos, with hard boiled eggs in the mustard sauce. It was indeed yummy and now I am craving some.
Any “Sausage, egg, and cheese on a XXX” sandwich, needs mustard… and perhaps a bit of catsup.
I’ve never had mustard on eggs, but I have had Coleman’s with the bacon/sausage/whathaveyou. It tastes good, and I believe mustard cuts the grease a bit.
My mom used to make me scrambled egg sandwiches with mustard on wheat toast for breakfast. Add a slice of cheese and maybe bacon or deli-sliced ham or turkey for one delicious and portable sandwich.
I learned mustard on eggs from David Letterman. He suggested he loved it on air, and I thought “Hey, let’s see what he’s on to.” It was a suprising compliment. I love it. But only the plain-old-yellow mustard works. That fancy stuff is wrong on eggs.
My mom puts mustard on eggs. I couldn’t tell you if it’s good or not, because I’m not a fan of mustard, period. But somehow it strikes me as less wrong than Dad putting ketchup on french toast.

Fancy, deli mustard at a minimum. Homemade is best!
