The thermostat says it’s 112 in here. It very clearly isn’t. The air seems to be flowing just fine, but the a/c isn’t cutting off at all.

Something’s wonky with your thermostat. You can get a new one for around $40-$50 and install it yourself if you know how to connect/disconnect wires.
Busted thermostat. Replace.

Sorry I couldn’t resist.
Most older thermostat covers pop right off. You could remove the cover and see if something like a spider has taken up residence there and has fouled the contacts.
That would be a spider running a very high fever
