I’m obsessed. I need help. Help making delicious wings at home, that is. I know there are tons of great places for wings where you live, but here, not so much. My tiny town has a Zaxby’s, which is a southern chain for all things chicken, and they have wings, and I do go there so much that they recognize me, but that Zaxby’s sucks- they always screw something up, to the point where it’s almost comical to see what they screwed up this time, every time. Asheville, 10 miles away, has a few places- Wild Wing Cafe, which really isn’t a cafe, it’s more like a bar, and it’s loud and bar-like and I don’t like to take my 17 year-old there. There’s a Buffalo Wild Wings, but I went to one in Tucson and didn’t like it. I don’t remember now why I didn’t like it, just that I didn’t. I guess I could search out other places in Asheville and do the old trial and error, but really at this point I should probably just research making my own. I have a deep fryer. Do you have any really, really good recipes for crispy yet saucy wingy goodness, of a hot-but-not-too-hot spiciness?
I like an Asian chicken wings recipe.
Fry or broil your wings until crispy. Meanwhile, in a bowl big enough to toss a big salad, mix:
A couple of big glugs of teriyaki sauce
Three or four pats of butter, melted
Sambel olek (or whatever Asian hot sauce you like), to your taste
A bit of minced ginger
A couple of squeezes of lime juice
Just before serving, toss the wings in the sauce.
I love these things. They’re not as horrifically hot and vinegar-y as classic Buffalo wings, but they’re immensely tasty and as spicy as you care to make them.
I’d probably use sriracha or Thai sweet chili sauce, but these sound good, will have to try.
Hmm, I share your wing addiction. It’s a lot of work for not much meat, but it’s tasty.
I think BWW does a decent version, compared to what I had in, umm Syracuse (yeah, half a state away). But any store bought wings are pricey for what you get, and I don’t see a lot of difference between any normal buffalo sauce and store bought vinegar based hot sauce.
But I’ve never made them at home. Are they really just deep frying the wings nude until crispy?
You can oven fry them, which involves very little fat and accomplishes the same effect.
I too am a wings addict. Here’s my favorite recipe:
Melt 1/4 cup of butter. Add 1/4 cup of Louisiana® Brand hot sauce and stir the mixture until smooth.
Add the following ingredients to the mixture:
1/4 teaspoon black pepper
1/2 to 1 teaspoon Tabasco sauce.
Stir this mixture until smooth.
Make sure wings are dry as possible before frying.
In a large cast iron pan, deep-fry individual wing pieces (about 10-15 per order) for 10 - 12 minutes at 375° in canola oil.
Drain wing pieces on paper towels, transfer the wings to a large bowl, then pour sauce on wings and toss until coated.
Serve with celery and blue cheese dressing.
