My wife is making macarons

And not the bullshit coconut cookies those asshat Keebler elves bake. These will be proper French style almond/meringue cookies with classic custard filling.

And she just pulled the first batch of the cookies out of oven and let me have one before she adds the filling. mmmmmmm… It’s like a marzipan biscuit from some alternate plane of deliciousness.

Holy good gods-a-mighty I love my wife.

I thought maybe she had discovered a new subatomic particle.

Hmmm. I’m with you on almond vs. coconut macarons (or macaroons), but have never had them as you’ve described, with custard filling.

I have had them with chocolate ganache and then enrobed in chocolate (and in that case calling themselves Sarah Bernhardts).

Guess I shall have to investigate. Darn.

They’re really, really good when made properly. I like them with chocolate custard filling. My friend’s girlfriend has a gluten intolerance, so she makes them every time she visits.

Yum! Too humid to make today.

So she filled them last night, with a butter-custard mixture (adding raspberry to some of them, with the rest just plain Bird’s custard mix flavor). I had one last night, and it was pretty good, but the book she got recommended to refrigerate them overnight, then take them out and let sit for 20 minutes before serving.

Which she did, and we just had some. Words do not describe - last night, they were pretty freaking good. But today? They are the most sublime confection I think I’ve ever had in my life - the custard softens the inner crust of the meringue-almond disc, but the outer crust stays crisp. So you get this multi-layered textural experience, with this velvety, buttery filling that comes out of nowhere and everywhere at once, on top of the delicate almond flavor of the shell. So they went from “pretty freaking” good to “holy shit these are fucking awesome I think I just peed myself a little” good. (Sorry for the language. If a mod needs to warn me, oh well - these are worth it.)

Seriously one of the most finicky recipes I’ve ever dealt with, but they are amazing when they turn out well. My favorite is filled with passion fruit white chocolate ganache… holy cow
