Need buttermilk ideas. (Other than biscuits)

I bought some buttermilk a few days ago with the idea of making biscuits. I’ve since decided against it. What else can I use the buttermilk for using things that I’m likely to have around the house?

Cornbread.

2 cups cornmeal
1 tsp each of salt and baking soda
1 egg, beaten
4 tbsp vegetable oil
2 cups buttermilk

grease a pan; preheat oven to 400°;

mix the dry ingredients together, then add the others just as the oven finishes preheating, pour into the pan, bake for 50 minutes.

Buttermilk is also the basis of a really nice ranch salad dressing.

Pancakes are good with buttermilk.

If you make the cornbread you can crumble some the next morning. Pour buttermilk over it. A very country breakfast or snack.

Or, drink it.

Buttermilk pancakes, buttermilk ranch dressing, buttermilk blue cheese dressing, buttermilk pie, southern style buttermilk fried chicken, buttermilk pound cake, buttermilk muffins, or use it in mashed potatoes in place of whole milk. I also highly recommend AHunter3’s cornbread recipe, yum yum yum.

I recall a vendor at the annual Gilroy (Calif) Garlic Festival serving buttermilk-garlic ice cream. Proceed at your own risk.

Soda Bread.

Don’t have Mrs T’s recipe to hand, but here’s a specimen one off the BBC website. They’re usually reliable.

Approximately 20 years ago I saw a chef named Juan Carlos Cruz on TV. He’d been heavy but developed healthier cooking habits. His program, “Calorie Commando,” was an attempt to make some popular dishes less unhealthy. He was ALWAYS using buttermilk—lots of flavor for the calories it cost, he said. Here’s someone’s appraisal of the fried chicken recipe:

If his name doesn’t ring a bell, it’s probably because he went to prison for trying to hire a hit on his wife. “Two sources close to the couple, who asked not to be identified because of the sensitivity of the matter, said their 20-year struggle to have a child overwhelmed them.” But because her religion would consider it a sin to kill herself he decided to get a couple homeless guys to do it.

Oxblood chocolate cake. This recipe is similar to the one I’ve been using for 40 years or so.

Drink it! I almost always have a half gallon of buttermilk in the fridge, just for drinking.

Buttermilk oatmeal bread. It’s a lightly sweetened quick bread.

Lemon poppy seed bread/cake

I often just sour milk by adding lemon juice to the milk instead of using buttermilk.

Chicken tenders. The best chicken tenders I’ve ever made were ones soaked over night in buttermilk.

A cross between a smoothie and a lassi: put that buttermilk in the blender with the frozen or fresh fruit of your choice, and honey to taste. I do this in the summer with fresh peaches, and it’s just about the most delicious drink on earth.
