I vaguely recall it, and I thought it was in one of the many anthologies I’d read, but going back through the titles, I’m just not finding it. It’s probably been 5-10 years since I read the story.
Let me sketch out what I recall from the story:
A man, returned to his home after being away
He has a bird who might be like a familiar.
There is a dragon that he’s going to slay.
The dragon occasionally turns into a woman to seduce and then eat men.
He goes into the dragon’s lair, expecting to be seduced and die, but instead kills the dragon while she is sleeping (post-coital, if I recall correctly) by stabbing her in the eye.
At the end, the bird (familiar) turns into a woman.
