Potato Vareniki - though perhaps not with pork chops. I’ve never made them myself, but I have had them in several restaurants and they have been invariably delicious. Many recipes exist, the link below is merely one of them.
Heat resistant brushes are easy to find and very useful in the kitchen.
This is the exact thing I came to recommend. We called them smashed potatoes in our house. They’re super easy, you can make them as savory as you like with the herbs of your choice, or just some olive oil and kosher salt. Soooo good.

Sorry to come back so late, but my kids were finally over after Spring Break and other things.
I ended up making these fondant potatoes since they didn’t require putting the pan in the oven and making cylinder potato shapes.
They came out great, really soft and buttery. Worked with the sauce from the pork recipe beautifully. Add in some steamed green beans and this is probably the best meal I’ve ever made (no cracks please, I’m trying )
I highly recommend it.

My go-to is this recipe from Serious Eats. Dead simple and a lot tastier than you imagine. If I’m feeling extra-ambitious I’ll give them a quick broil to toast up the skins, and maybe toss with some butter and herbs, but some nights that feels like gilding the lily.
OK, super late to this party but my contribution apropos of nothing is something I learned to make last year from Chuck Hughes… pommes aligot. If you like cheese fondue and you like mashed potatoes this might just make your day. Well worth the effort involved.
