Need the "regular pastry recipe"

The Peach Truck came to our area today. They pick peaches in Georgia, load them on trucks and drive them straight to designated locations. People wait in lines around the block to get a crate of picked yesterday peaches (the only size they sell). My wife went in with three friends and we now have about 6.5 lbs of peaches.

My mom used to make the best peach cobbler so I called to see if my sister had her recipe. She did but it turns out it was actually my Grandma’s recipe (which probably was her mom’s or grandma’s). The recipe is pretty clear except it says to make “the regular pastry recipe.”

So, does anyone know what would have been the recipe in rural Tennessee over 100 years or more ago. I would imagine it uses lard/shortening. I found a couple on-line that are similar but I’d really like to know one that someone here has actually made and swears by.
