While looking up recipes for breakfast, I found this recipe. My family doesn’t care for raisins and we had 1 3/4 cup of coarsely chopped walnuts that needed eating up, so I made a few alterations. It worked well. Any one have any new recipes for the new year?
Streusel Walnut Maple Coffee Cake
knob of butter
dollop of maple syrup
cinnamon
1 ½ cups all-purpose flour
½ cup granulated sugar
2 teaspoons baking powder
¼ cup maple syrup
½ teaspoon salt
1 beaten egg
skant ½ cup milk
¼ cup cooking oil
1 ¾ cup chopped Walnuts
¼ cup packed brown sugar
1 Tablespoon all-purpose flour
1 Tablespoon butter or margarine, softened
1 teaspoon ground cinnamon
Oven 375°
In a sauce pan combine: melt a knob of butter ( about 3 Tablespoons) and a dollop (between a Tablespoon and a ¼ cup) of maple syrup and a bit of cinnamon. Add nuts Stir until coated. Stir together the 1 1/2 cups flour, granulated sugar, baking powder and salt. Combine egg, milk and oil. Add to flour mixture; mix well. Stir in half of the nut mixture. The batter should be too thick to pour. Turn into a greased 9x9x2-inch baking pan. Combine: ¼ cup packed (dark or light) brown sugar, 1 Tablespoon flour, 1 Tablespoon butter and 1 teaspoon cinnamon; combine until well mixed and then stir in remaining nuts. Sprinkle evenly over batter pushing mixture in a bit. Bake in a 375° oven about 25 minutes.
Makes 1 coffee cake
