No more Stickin' Chicken!

Always had a problem with baked chicken pieces sticking to foil lining of the roasting pan. Tried coating it with olive oil, Pam, vegetable oil. Nothing prevented the chicken from stickin’. Well toinght I did something different. Instead of foil I used Parchment Paper to line the pan. The stuff that is used for baking. Worked like a charm! Just placed the legs on the paper, sprinkled them with salt/pepper and some chili powdeer and popped them in the oven. 375F for about an hour, turning every 20min. and I had the finest legs in town. Woo-hoo! Gonna try some hot wings next. I guess you can teach an old dog new tricks.

I saw a commercial this week for aluminum foil combined with parchment paper – foil on one side, paper on the other. I’ve been buying the no-stick foil, but it still needs a shot of Pam for chicken and fish.

You could also place the chicken on top of some sliced carrot sticks or other veggies.

Great suggestion. Like an edible rack.
