Not too salty Chinese-style rice noodle recipe - need answers within 18 hours

My wife is on a gluten and dairy free diet. As a family which relied to a great extent on pasta, and to a lesser extent on pastry, this is causing some issues. We also eat a lot of rice, but understandably Lady Mondegreen is getting sick of this. She would like a rice noodle dish tomorrow night, which sounds good to me, and the Mondegreen Princesses agree as well.

The problem is that the commercially available Chinese/Asian sauces here in Australia tend to be very salty (albeit very tasty for me - I’m far less sensitive to food shortcomings than Lady Mondegreen).

This is a two part question to include both Australians and non-Australians respectively:

Since no one else has contributed, I guess I’ll tell you what I know. I should warn you upfront that my cooking sucks. However, I’m Chinese, and I’ve seen my mum cooking rice noodle and have tried to learn, since it is one of the easier things you can cook. The way she does it, there really isn’t any complicated special sauce, other than just regular soy sauce. You basically just heat some oil, brown some chopped onions, and then stir-fry some vegetables. They could be shredded carrots, cabbages, or whatever else you can muster. After they have softened up a bit, then you just add the rice noodles, season, and mix them up well until they’re heated through. The seasoning is just soy sauce and a little bit of salt and sugar, and some chopped garlic and scalions. You can also add some scrambled eggs at this time. You may need to add some water to keep things from getting too dry. You don’t need to cook the rice noodle with chilli sauce, but I do highly recommend serving with it. They go very well together.
