Hi,
Can someone please tell me if an employer has to give you either use of or money for any unused but accrued vacation days if you quit or get fired from a job? How about sick days/personal days? I live and work in New York. Thanks a bunch!

Find the New York unemployment dept. or labor dept. webpage. You should be able to find out from one of them.
For what it’s worth, I am a labor lawyer who practices in NY. I believe that the answer to your question is “yes.”
For a definitive answer, call up the Labor Standards Division of the New York Department of Labor and chat with an investigator.
