@purplehorseshoe I just realized I gave you really bad cooking advice and I apologize. You live somewhere cool enough that you won’t need sheets of ice to keep the cheese cool enough, and I needlessly complicated the process.

Short version: Keep the smoker temp under 90F. Use good wood and move cheese wedges around every 15-20 minutes. Don’t cut the wedges smaller than two inches because they will heat up too fast. If you try to smoke cheese or cooked salmon when it is typical AZ heat, stock up on broiler pans which are easily found at any thrift store.

Aw, sweetpea, you have vastly overestimated my free time and ambition level, but if those are both for some reason simultaneously elevated, I’ll keep your advice in mind.

(Then again, smoky, HOT ooey-gooey semi melted cheese sounds really good.)


I under-seasoned my chicken-veggie bake thing so the potatoes and brothy juices were less than satisfying. And the rolls were a different brand (or rather, trucked in from a different semi-local bakery) and I have decided I definitely like the other one better.
But I have a thigh’s worth of meat to shred for tomorrow’s spring roll. Thai rolls for breakfast, anyone?

Now I’m having an odd combo of a nice hot cuppa, and coffee ice cream. The former to take the chill off (currently 45 F out) and the latter because, well, I friggin’ wanted some damn ice cream.

as a child/tween who spent time running between trains planes ( I learned to hate the “Chicago Stroll”)and buses with mere minutes between them I know how that is but since my travel schedule was coordinated by the states of CA and IN the only tolerated delays were weather related

I grew up in North Central in and somewhat Pentecostal off and on … mom was a Michigan and Michigan State fan…ND and OS were dirty words in my house … and in the 90s you just got sick of their "how great we are " schitk …
