It’s a lightly-spiced cake with chopped dates in it, but the main attraction is the topping, which is brown sugar, heavy cream, and coconut whipped together. Heavenly.
I seem to recall reading somewhere that it was invented by a Canadian chef - what I do know is that it was invented to serve to Queen Elizabeth (II) on one of her tours - maybe her silver jubilee. I’m in too much of a morning rush to Google. And Google is beginning to suck big time.
