I am going through an interview with Oracle and was wondering if anyone here know how far back they verify past employment history on your resume?
Can’t speak for Oracle but I’ve had companies I interviewed for go back all the way, like 20 years and 4 employers.
I’m not saying it’s common but I wouldn’t lie personally if that’s what you’re contemplating.
The best advice is not to falsify your experience at all. Then, it doesn’t matter how far they go back because they aren’t going to find something out of place.

Or alternately, only put the last X employers on your resume and leave off the ones you don’t want them to see. Your resume doesn’t have to be 100% complete, although employers will probably ask about gaps longer than 6 months.
