Panini Press! What to make?

I was very excited to find a box from Amazon on my porch the other day, and a completely unexpected panini press inside. A distant cousin who I’ve recently connected with sent it to me.
So! Now I need ideas. I’ve made pizza sandwiches for the kids, and the typical deli meat/cheese/tomato combos for myself…just wondered what everyone else’s favorite recipes are.

S’mores.

Cubans!

Muffuletta Sandwiches. Make a mix of sliced or chopped olives, and some sweet or hot peppers, use sliced italian or french bread. Lay down bread, olive mix, prosciutto, provolone, and more olive mix. Toast on your pannini.

Ooh, these sound so good. I’m hungry even though I’m not hungry!

Second on the Cubans! I made some after watching Alton Brown make his and they were great. I admit I had trouble finding roast pork at the time so subed turkey. Still great though.

These all sound so %#^@&ing good.
I’ll add reuben sandwiches to the list.

Good one - a well made Reuben is a thing of beauty.
