Paper Tablet ("reMarkable-Lite") Suggestions?

The Elder Ottlet has indicated that she would like a “paper tablet” for Christmas (she currently uses a notebook with erasable pages, each of which has a QR code that can be used with her phone to scan the contents, but she would like something a bit less kludgy). While she was quite impressed with a friend’s reMarkable, she said that she doesn’t need anything that expensive.

Problem for me is that the more I look into the subject, the more confused I get: the options range from items which seem to be little more than glorified spiral-bound notebooks to devices which would seem to be at home on the ISS. The only criteria she’s given me are that multiple pages and the ability to interface with Windows would be nice, but not absolutely necessary. Given a budget of USD 150-200, does anyone have a recommendation or three?

This seems like this decade’s PalmPilot, i.e. something that seems indispensable but actually has a narrow range of application and is based upon a technology that is rapidly going to become obsolescent and end up in the bottom of a drawer somewhere while the manufacturer drops support or just goes out of production after being acquired by Microsoft. Is there a reason not to use a tablet computer which would have more general application, i.e. web browsing, email, et cetera?

Kindle Scribe is prob about as cheap as you can get and get something worthwhile.
