I just realized my copy/paste skills leave a little to be desired and I didn’t capture the correct link to the macaroon recipe I use. For those interested, here it is:
I’m not a fan of hand-made shmura matza in general (I really prefer the machine stuff), but I’ve sampled a range of it over the years, and I agree that the Chabad stuff is vile. It’s thick and hard to chew, which makes sense in that it’s designed to be shipped unbroken to the seders that Chabad runs in Phnom Penh and Lusaka and so on. If you’re eating hand-shmura, get ANYTHING but Chabad. My family has always used Puppa Tselem matzas, but I’ve heard good things about Charedim. Unfortunately, my husband’s family, with whom we must have seders every year (I can rant about this some other time) insist on the nasty Chabad stuff. Of course, they eat a token bite of it, but my Orthodox husband and I have to sit there crunching away for several minutes on the minimum amount required by Jewish law. Not so fun.

We eat Yehuda Matzos imported from Jerusalem. They are Muy Yummy!
Yeah, the best machine matzas IMHO are Yehuda and Aviv matzas. Light, crisp, and somehow juts better than all the others.
