Pico de Gallo

How did Pico de Gayo get its name? It literally means beak of the rooster or Roster tip.

That should say rooster tip, not Roster tip.

WAG: Because the peppers in it give is a “bite” or a “peck”.

From here, they say it could be from the sound of the knife on the cutting board as the chef minces, dices, slices and smashes. However, I’ve got to go with the explanation that it’s because the chilies pack a peck of a punch.

I have a WAG I’ve never been able to confirm or disprove.

I suspect that pico de gallo is derived from a French recipe, that would have been called something like “piquant de Gaulle”; whaddya think?

Maybe they just grabbed it from the explorer of the same name, kind of as a tribute, like oysters rockefeller…???
