Pie filling help

I made a pie crust, but it shrank. It’s only about 1/4" high. It was going to be lemon meringue, but I don’t think that will work. What else could I fill it with that won’t go everywhere?

Mix some cream cheese, sugar, sour cream, vanilla, and lemon zest together. Beat it until it’s fluffy and smooth. Spread it in the pie crust.

Buy a bunch of pretty fresh fruit–berries, stone fruit, kiwis, and the like. Slice them and arrange them in radial, mosaic-like patterns.

Optionally (but recommended!), microwave a bit of seedless raspberry jam, thinning it with a bit of water or liqueur. Brush atop the fruits.

Voila: gorgeous fresh fruit tart, one of my very most favorite things to make!

You could make a simple lemon filling (such as for lemon bars) on the stove top, pour it into the crust, and serve it as a lemon tart. Sprinkle powdered sugar on top. If you were really inspired, you could go ahead and make a meringue topping and put it under the broiler (or use a kitchen torch) .
