Yay! I just made a caramel apple pie myself. It’s cooling on the kitchen counter right now. I have no idea what kind of apples I used, they came off the tree in my sister’s yard.

I disagree. Your pie has now won in the apple pie awards. Now step it up and see if it can compete in a broader category.
Moot now, but every tried and true old classic started off as someone’s bold experiment. My vote was for trying something new.
As an aside, this is the first time I’ve seen an SDMB poll get so many responses, while still having a big fat zero on one of the options. I guess we’re really not big applesauce fans here.
Chronos: I think you’re right about applesauce. I’ve made it before, and it was appreciated, but people over the age of five just don’t go hog wild for applesauce. The winner of the miscellaneous category made apple butter.
BigT: Yes, that’s what my friend said afterwards, that I should compete in a larger arena now. Funny thing is that the woman who got third place this time, also got third five years ago. (I congratulated her and the second-place winner.)
TruCelt: Hee! BTW, you might have enjoyed the music at the festival. If anyone’s ever heard of Red McWilliams, he was performing. It was all a lot of fun. There were rides, too, and a lot of cool stuff for sale. In fact, on the first day (yesterday was the last) I bought the same honey I used for the pie! I thanked the vendor for that, too.
Miss Woodhouse: The caramel-apple recipe says to make a syrup, put half the filling in the crust, pour on half the syrup and 10 caramels, add the rest of the filling and pour on the rest of the syrup and 10 more caramels.
