Pig Parts. Oink

There’s a well known Mississippi restaurant that’s famous for these pigs ear sandwiches on plain white bread. With mustard and Tabasco.
Ummm…nope.

I have this supplement that apparently has pig’s spleen, among other ingredients in it. My uncle bought it from a nutritionist’s office without tasting it first, later discovering it had a strong aftertaste. Yet I looked up a pig’s spleen confit recipe on the net. My roommates would commit me if I had a jar of that in our refrigerator so the pills would be preferable.

There’s one other thing except the oink that isn’t present in Scrapple, at least in the US. All animal lungs have been illegal to sell in the US since 1971. If you’re eating pig lungs in any dish, they were obtained from an illicit source.

The Crew love Pig Ears. But they eat Mouse, Rat, Raw Undead Squirrel and Cat Shit. Not gonna rely on their opinion.

I’m not trying to hijack but the mention of fish lips reminds me that there are those who insist that the choicest morsel on a fish is the jowl.

To get back to the pig parts, I have looked and looked and I cannot find hog hocks or pig’s knuckle that has not been smoked. My family used to cook raw pig’s knuckle in sauerkraut with potatoes when I was a child, and I would love to have it again. It’s good with smoked knuckle, but the unsmoked knuckle has skin that is thick melty heaven.

Where can I find unsmoked pig’s knuckle?

I order a whole grilled snapper whenever it is offered, and I agree with that. But, I’ve been told by a Chinese friend that the eyeballs are exquisite. I keep meaning to try one,

If there’s an asian market near you, they almost always carry them. I’ve also seen them at Latin markets. Failing that, you can try talk to someone in the butchery department of your local store to see if they can special order them for you.
