I was recently served salmon patties with a delicious pink sauce over them. Slightly sweet I suspect it may have a fruit base but for the life of me I can’t indentify it. Does anyone have any idea what this sauce could have been? I am usually pretty good at figuring out dishes, sauces being one of my weaker points.
There are a lot of pink sauces for salmon. Did it seem to have a citrus base? Was it spicy at all?
Was it Remoulade?
It could have been just a simple ketchup/mayo sauce like you find on a burger. Or perhaps a louie dressing:
1 cup mayonnaise
1/4 cup ketchup-based chili sauce
1/4 cup minced scallion
2 tablespoons minced green olives
2 teaspoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon bottled horseradish
Salt and pepper to taste
Or anything in between.
Reduced blush wine (reduce to about 1/2) like white zinfandel thickened with a bit of blond roux used to be a thing in the 80’s. It’s definitely sweet and fruity.
As TriPolar said though we really need a bit more to go on.
I’ve served salmon with a strawberry salsa. Really good on seared ahi tuna.
Pink peppercorn sauce is another common one. But presumably you would have noticed the taste.
I wish I could describe it better but I strongly suspect it was this. I had a feeling the pink was from paprika.
Some good suggestions here I want to try, I love the salmon patties from canned salmon, a variety of sauces to choose from even makes them better.
You can buy bottled Remoulade sauce. Why not give 'er a try? (What time do you want us over?)
Creole style remoulade may be pinkish, but it’s not really sweet. The best way to describe it might be as a fancy cousin to tartar sauce.
