Please! How to make flavoured popcorn?

Want to make my own, not purchase.

Got the pan. Got the popping corn. Can make plain popcorn all I want. Good.

Now, how to give it a flavour… butter, caramel, toffee etc. ??

Try syrupy flavouring gloop in the pan with the corn… tends to burn or not get evenly coated over the corn.

Try pouring flavouring gloop over fresh-made popcorn… but end up with some bits totally saturated in flavouring gloop and other bits still naked.

Obviously, I’m a culinary klutz. What’s the right way?

I am happy to report this is a subject I can actually answer…

First: Make your caramel or whatever flavor sauce you want to put on the corn. Make sure it is warm (don’t let it sit for long!) Pour in very large bowl you can cover.

While the mixture is still warm pop the corn you want to use, then pour the popcorn into the bowl with the mixture, put on the cover and shake!

Sometimes recipes need to be changed to get the right consistancy!

You can also flavor the oil. My favorite recipe: add 2 drops of tabasco sauce to the hot oil, then add popcorn. This is especially good for people who are on a salt restricted diet but like a little extra flavor.

The trick in distributing the caramel (or whatever) is that you can’t delay the mixing, once it starts to cool, it glumps up and won’t distribute. Get a helper to pour it slowly while you mix vigorously. That’s a great old chef’s trick, mix rapidly while slowly adding the immiscible ingredient.

oops, let me clarify that tabasco recipe. You add the tabasco to the oil and add popcorn KERNELS, then you pop it as normal. The tabasco is added to the popping oil BEFORE you pop the popcorn.

Thanks for these very helpful replies. It’s fairly clear where I was going wrong… I was trying to add flavourings that were cold. See? Told you I was a klutz. Still, never ask, never learn.
