I’m sure this has been discussed. I have a sneaking suspicion that I may even have brought it up before.
I would really like to move my email accounts away from Google (and Yahoo!). Any suggestions for new providers?

IMO, ProtonMail is the best available for end-to-end encrypted email.
Privacy I suppose, but also a desire not to support unethical companies. Google is so far up in my business that they’re looking out my mouth when I open it. I’m not interested in being their product.
You can get an Office 365 account for a few dollars a month. You can then use Outlook Online and the Outlook app on your devices, they stay synchronised much like GMail.
If you have an Apple device, you can also use an iCloud.com account in much the same way.
I’ve also had an easy time with ProtonMail.
Any chance you could use your own domain and host your own mail address(es)? That way you have total control and no one will evesdrop unless you let them. Another advantage is that as long as you own the domain, you can host it anywhere and your email addy won’t have to change.
Most web hosting services, like GoDaddy, can provide this function.

I don’t care about security, I want user-friendly’ The tiny Gmail compose window is only 3 lines high, and when reading the inbox, the right side is cut off the tiny window. I have to compose offline and copy-paste, or copy-paste inbox messages and read them offline.
Huh? Mine is at least 20 lines, and there’s a button (looks like 2 diverging diagonal arrows) that expands the compose window to the full screen.
Wher might I look for this amazing button? Maybe Firefox doesn’t support Gmail. (It doesn’t, for Google Phone.)
^^^^^ That only works in the “new message” mode, and is not available when replying to an inbox message or continuing conversation. Even then, it hides the first line when typing a 5th line.
^^^^^ In Chrome it works the way you describe, but still no popout unlell in New Message. But window expands to show more lines. Which it does not do in Firefox.
I’ve had an account thru mail.com for eons and I’ve been happy with it. I chose the address with engineer.com since, I am one. As I recall, they had a gazillion different options.
rubbish … my environment is win-10 with firefox-74 … doesn’t matter the browser … even brave and vivaldi browsers offer same relevant views. what could matter is how you’re accessing gmail … desktop or mobile? imho, this is the only variable that matters … it’s also the only one you did not mention.
i don’t have mobile … my laptop gmail displays as traditional sized email interface (e.g. allowing many lines of text). gmail does offer different view options … of which one is called “compact view” … i’ve used only “default” view. if you wish to change view … look for the “gear” icon … right beneath your “user” icon (top-right corner). the down-menu offers “display density” … think that’s where you’d change from compact-view. however … i’m pretty certain this is not your issue.
when viewing “inbox” … a listing of 20 or so emails may be displayed at any one time.
when “composing” a message … a smaller window appears at right-bottom … 20 or so lines of text are in view at any one time.
when “replying” to a message … a smaller i-frame appears inside the email message window … this probably is your issue.
within the “compose” window … notice the ‘tricolon’ ⁝ at bottom-right … right beside “trashcan” icon … this gives you option to “full-screen” the compose window.
within the “reply” interface … the height may default to very short height … but you can enlarge that to pop-out or full-screen … in much the same way.

This was going to be my suggestion. Domain hosting is pretty cheap. I’ve been thinking about doing this for my personal stuff but I’ve just been too lazy to change the address associated with all my online accounts.
Can’t you simply set the old address up to forward all messages to your new one?
A very big issue with email is spam filtering. Gmail provides very good filtering.
If you get your own domain you are probably responsible for the filtering.
Use a real email client. Seriously. Every OS comes with one, and there are many others available ranging from free to cheap. Your compose window will be a real resizable window, not a small pseudo window. As far as I’m concerned, using a browser interface to read email is like trying to go on a cross country trip on a tricycle.
