I am going to make a pudding for christmas dinner, and I want a knock your socks off good plum pudding. I have brandied hard sauce down to perfection … but am tired of the same old plum pudding I have made for decades …
1 cup sugar
1 cup butter, room temperature
1 cup milk - whole unskimmed
2 eggs, beaten
2/3 cup molasses
1/4 teaspoon salt
1 teaspoon baking soda
3 teaspoons baking powder
3 1/2 cups all-purpose flour plus 2 tablespoons
1 1/2 cups raisins, finely chopped
1 cup dates, chopped
1/2 cup nuts, chopped
3 tablespoons candied orange or lemon citron, finely chopped [whatever i have on hand]
1 1/2 cups chopped apples
1 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
