I’ve never seen a single episode of X-Files, and I’ve never seen The Godfather, any Tarantino movie, Forrest Gump, or The Shawshank Redemption.

What comes to mind right now is The Princess Bride. I hear it’s great and intend to watch it someday. Oh, Chinatown is another.
Never seen even a minute of The Apprentice, Law and Order (any version) or Survivor, Lost, and Incredible Race. (I think those are all popular shows)
I’ve never seen a single episode of The X-Files, Star Trek: Discovery (and I’m a Star Trek fan), Stranger Things, or Game of Thrones. (The only parts of Game of Thrones I’ve seen were Cersei’s Walk of Atonement, and Joffrey’s death.)
I’ve seen the first two Lord of the Rings movies and wasn’t impressed enough with them to want to watch the third. I fell asleep in the theater in the middle of The Hobbit: The Desolation of Smaug, and remember very little about it. My landlady’s daughter’s family decided to treat us all to a day at the theater, and for me that meant being dropped into Part 2 of a trilogy I’d not seen Part 1 of.
I always seem to miss BIG movies and shows. The ones everyone else are talking about.
Game of Thrones, Walking Dead, Twilight and Vampire Diaries, Orange is the New Black, X-Files, Supernatural, Sopranos.
And I can’t count the number of times my wife or I say “We really should watch the Godfather movies some time…”
I never saw any of the “Game of Thrones”, and despite growing up in the 1970s, I never saw an episode of M * A * S * H, because my dad didn’t want us thinking there was anything funny or entertaining about war, and I can’t recall ever watching a full episode in the meantime either.
I have read “The Handmaid’s Tale” and “Orange is the New Black” (MHO: the first book was awful, the second one was very good) and have no desire to see either series. I did catch the first few episodes of “Stranger Things”, but I never even made it through the first episode of “The Queen’s Gambit.”
I’ve never seen a single episode of “The Simpsons.” Had I known it would last this long I might have started watching it 30 years ago, but now it would just be too much to catch up on.
I saw one half of one episode of “Friends.” I didn’t like it. I was in my 40s by then and couldn’t relate to the comedic angst of 20-somethings. Later that summer, I gave it another shot. Wouldn’t you know, it was the same episode.
Like someone else also mentioned, I’ve never watched (or had the remotest interest in watching) any of the various incarnations of “Law & Order.” Ditto any “C.S.I.” series.
One insanely popular movie from the 1970s that I somehow have never seen is “The Sting.” I’ll watch it if it ever shows up on Netflix or Amazon.

I also haven’t seen Orange is the New Black, Supernatural, Big Bang Theory, Friends, or Seinfeld. The last family I lived with watched Two and a Half Men, That '70s Show, and The Big Bang Theory CONSTANTLY. and I didn’t watch either of them, either. I really don’t like sitcoms.

American Idol would have made my list, too, but I watched one episode of it, in 2009, when Brian May and Roger Taylor of Queen performed with the contestants, including Adam Lambert, who joined them in Queen several years later.
I’ve never seen Deadwood, any version of CSI, Big Bang Theory or Mad Men. Hardly seen Friends as the few episodes I have seen were not great. I’ve seen s1 of The Sopranos a couple of times but didn’t get any further either time as I thought it was wildly overrated.
I (a Brit) won’t be watching the Queen’s funeral on Monday, does that count?

I haven’t seen any of those, either. I also haven’t seen any reality show.
Better Call Saul, Walking Dead, Stranger Things, Orange is the new Black, Mad Men, The Sopranos, Breaking Bad. If any movie was released to theaters in the last 3-4 years became popular, I did not see it, except for Top Gun Maverick.
TV: Never seen an episode of Sopranos or Mad Men. Just now getting around to watching Deadwood.
Movies: Never seen Top Gun or Risky Business. I think I’ve seen parts of Casablanca but not from start to finish. A few years ago I watched Gone With The Wind on TCM, just so I could say I’ve seen it.
I admitted to Casablanca, I’m working on it.
TV: Sopranos, Big Bang Theory, Game of Thrones, Supernatural… In fact, about the only TV I’ve watched in the last ten years has been Resident Alien and a few detective series like Professor T and Murdock Mysteries. Older shows: I never watched Cheers, Friends, or any version of CSI or Law & Order. I did watch part of an episode of X-Files, but it was the first half of a two-parter.
Movies: I’ve never seen Gone with the Wind, Princess Bride, The Wizard of Oz, Casablanca, the Lord of the Rings trilogy, the third Hobbit, either version of Top Gun, any DC movie other than the first two Superman movies, or any of the MCU movies except the first Avengers film. I watched the original Star Wars trilogy and The Phantom Menace, but nothing since. And I’ve only seen five Star Trek movies, the most recent being Insurrection.
