I have a potluck next Tuesday and I am looking for a few good potluck recipes.
Couple of stipulations, I am limited in galley space and cooking techniques because I am in an RV- I have a stovetop and an oven but I’d prefer not to have to fire up the oven (it gets too hot, uses too much propane, and is generally a pain in the butt.). Also, the potluck is for a group of Midwestern and Northeastern Senior Citizens. I’d like to make something a little different but not too far from the traditional that it won’t get eaten (I don’t think a curry would go over too well, if you know what I mean.).
Any recipes or suggestions would be most welcome and appreciated.
Do you have a crock pot? Something like chicken noodle soup is easy to make, and a crock pot makes it even easier. I don’t have a recipe, per se, but the last time I made it, I used something like this:
about 2lbs of chicken (I cheat and use boneless skinless breasts), cut into cubes
a large onion, cut into 1" chunks
a few carrots, cut into 1" chunks
a few stalks of celery, cut into 1" pieces
one large can of chicken stock
one bag egg noodles
one bag frozen peas
I like to add some fresh ground black pepper, a bay leaf, and some rosemary. Cook it on low for about 4-6 hours, then add the noodles and peas. Those need about 10-15 minutes, and you’re done!
Put everything except the noodles & peas in the crock pot, season to taste, and cook for 4-6 hours. Although I’m sure you could have figured that out, I just feel dumb for not making that clear in my last post.
I like to make a big fruit salad. Splurge a bit on berries and things that people might not usually buy for themselves. It also has the advantage that you don’t have to worry about keeping it warm.
I have one of those tiny half size crockpots, but I need to make enough to feed 15. So no, not really, crockpot recipes are out of the question at this point.
Maybe some kind of twist on banana pudding? (The layered kind made with Nilla wafers and sliced bananas.) Maybe something layered with chocolate pudding, nilla wafers, and cherries or some such? Or use vanilla pudding, nilla wafers and chocolate chips? Something along those lines? It’s not bad made with instant pudding either. Not sure how doable it would be to make enough of it though.
Do you think maybe some kind of a lamb stew over rice would be too bold? Like I said, I want to make something different, a real treat… but something still palatable to Old Folks?
Maybe a Mediterranean Lamb Stew? I could cook the stew in a large pot over the stovetop and make rice in the little crockpot, maybe? Can you cook rice in a crockpot?
