Puerco Pibil

So, I was looking at the special features for Once Upon a Time In Mexico, and one of the special features is Robert Rodruiguez running around in his kitchen with a camcorder (presumably a digital camcorder, knowing Rodruiguez) demostrating how to prepare and cook a dish called puerco pibil.

I was idly wonderign if anyone had input on changing this recipe to use beef instead of pork (though in that case it would hardly be Puerco Pibil). Just a personal quirk of mine, I like beef.

Any other random input on similar dishes (or just how you like to make Puerco Pibil) would be appreciated too.

Looks yummy. I’ll ahve to try it, but the Wiki article doesn’t actually say what you do with the ground spice powder you made in the first step, does it?

Oh, and I imagine you could substitute beef if you wanted, but it looks divine with pork, IMO.

Hrm… It really doesn’t, I’d have to check, but I think you toss it in the blender with the other stuff and then pour it in the bag with the pork chunks. I’ll go watch the Ten Minute Cooking School again and fix the Wiki page.

I like to make Puerco Pibil by going to Coyote Loco and getting them to make it for me! :smiley:

Though I now will look into making it myself, since Coyote Loco is a 6-hour drive away from where I live. A bit far to go for dinner.

Just don’t shoot the chef to restore order and balance.
