Question About My New Butter Crock (Photo)

I received a butter crock as a gift, and I’ve a question about how it works.

I know that I fill the insert with butter and the bowl with water, but I’m confused about the purpose of the two holes on the sides of the insert. Why are they there? I don’t see them on other butter crocks I’ve looked up online.

It’s so the butter doesn’t get sucked out when you pull the lid out.

More on the care and feeding of butter bells (aka French butter dishes) is here.

So how high should I fill the insert? Should the butter not block the holes?
