You might want to try this peanut sauce on ramen, I usually make it with glass noodles, and either chicken or shrimp.
Oil for frying
1 shallot, minced
1 clove garlic, minced
2 or 3 hot peppers, minced (dried or fresh)
1 cup water
splash of soy or fish sauce (whichever you got)
1/3 cup chunky peanut butter
1 tbsp sugar or honey
splash of sesame oil
Heat a bit of oil in a small saucepan, fry the shallot, garlic and pepper for a minute, drump the other stuff in, stir it up, and reduce it a bit, til it’s nice and thick. Then poir it over the noodles. You can also try adding ginger, lemon grass, coconut milk, whatever you want really. I usually add some shrimp or chicken to the sauce as it finishes, it’s a quick tasty dinner.
