I have about 5 pounds of those storebought winter tomatoes…you know the ones Imean, right? Probably no need to share a gruesome description–suffice to say they were free and I’d rather cook them than compost them.
Can I get away with tomato soup, you think? Or should I go with something spicier to hide their wintery blandness?
Maybe try chopping and oven-roasting them with some olive oil to bring out flavor? I know I’ve seen recommendations for that with cherry tomatoes.
I’d make tomato jam.
Dice them up, then simmer them for about an hour with some sauteed sliced onions and cooked bacon for spaghetti sauce. Garnish with sliced basil and ground pepper.
