Oh the good old days (1980’s) when grandma would take us out to Marshall Fields for Sunday champagne brunch. Commonly we frequented the Marshall Fields in River Oaks (Lansing Illinois), but we also went to brunches in downtown Chicago.
Part of the brunch was fantastic little thin rolled brown pancakes. Covering the rolled pancakes was maple syrup and butter (very rich).
They were thin pancakes akin to a crepe, though I have made crepes before and nothing ever looked or tasted like those pancakes.
My cookbook from Fields doesn’t mention the pancakes, and of course the classic brunch is no longer served at Marshall Fields. In fact I don’t even think they do breakfast at all anymore (except for donuts in the basement of the one downtown).
Would there happen to be a chef or perhaps someone who used to work at Fields on the SDMB that would know what they were?
Thanks for the offer gadget, but I have all the recipes I am looking for (except for the pancakes). My favorites are Marshall Field’s Ozark Pudding and Epicureans (ham and turkey sandwiches with a rich sauce covering it).
DDG it could be a Blini, although I have seen other recipes with buckwheat flour and that would seem more consistent with Field’s darker color. Since Fields didn’t serve the pancakes with the traditional caviar or even sour cream, I am willing to bet they altered the recipe as well.
The problem in getting the recipe from Fields is that it was taken over by Dayton Hudson. No one there seems to remember champagne brunches, let alone what was on them. I am willing to bet that the answer will have to come from someone retired from Fields, or who once worked for them in the 80’s.
I don’t know the crepe recipe but can tell you the the whipped butter on the crepes had maple syrup (or maple syrup flavor) in the butter. I am looking for a recipe for the baked sausage and apples. Anyone?
I could have sworn that I read in the last couple of months that someone had bought the Marshall Fields name and was planning a resurrection along with a number of other brands that had been bought out over the years…
