I love jerky. My girlfriend loves jerky. We’re looking for a good online jerky supplier. I’ve tried http://damngoodjerky.comDamn Good Jerky, but it’s just too damn salty. It makes my gums hurt.
We’ve had www.coopersbbq.com/default.aspCooper’s BBQ jerky (from Llano, TX) and it’s heavenly. It’s like there’s a party in my mouth and someone invited a clown, a magician, and a high priced call girl. Oh, and there’s also a moon bounce. However, it’s incredibly expensive to order online.
We need a new jerky that’s relatively inexpensive but not salted like the soil of Carthage. Please help us fulfill our dried meat dreams!
Have you tried making it? It’s *very *simple using cheap, thinly sliced, marinated round steak and drying it out in your oven at 175°F. There have been threads here about it.
Never tried making the stuff, but it sounds like it’s worth a shot. Good thing for a lazy weekend at home, I suspect. Thanks!
It’s super-easy. I know hunter types who can’t cook at all but love making jerky. The recipe I use:
Partially freeze (or partially thaw) round steak (to make it easier to slice). Slice it extremely thin, discarding any visible fat (because fat looks awful in the finished product). Marinate overnight in a bowl or ziplock bag, typical marinade mixture is 1/2 soy sauce to 1/2 Worcestershire sauce, some onion powder and garlic powder (or chopped onion and garlic), and if you like, a tsp of smoke flavoring. Then drain and lay meat across greased racks set in flat pans (to catch the drips). Dry/cook in lowest oven temperature setting, usually around 175°F. It will smell delicious all day long. After many hours, it’s done.
I use round steak because there’s almost no fat waste, you get nice even slices, and it’s cheap.
I’ve also made jerky with teriyaki marinade and a lime-chili marinade. Be creative. I saw a Thai-style recipe with lime juice, fish sauce, mint leaves, and chile peppers that sounds tempting.
I like the stuff they sell at Costco. “Pacific”-something.
