I went to the store yesterday and they had green chile cheese curds on sale. So I bought some. I have never eaten a cheese curd and I didn’t even know they made green chile cheese curds. What do you make with cheese curds? The only thing I have ever heard of is poutine. So now I have acquired some frozen precut french fries and some frozen, prepared red chile sauce containing mostly water and pureed red chiles with trace amounts of salt, garlic, and onion. I also have butter, fresh green onions, avacados, corn starch, and a few other items available if needed. Does anyone have a recipe for authentic New Mexico-style red chile poutine?
My beloved Canadian SIL would be horrified at attaching the word poutine to such a dish, but here’s a recipe.
I finally got around to making this. Kept it simple – fries, red chile sauce, and green chile cheese curds with a small garnish of yogurt and chopped green onions accompanied by a piñon cola. I thought it was pretty damn good.
