There is a place in Chicago that has hot dogs from rabbits, pork, maybe elk and a variety of other animals. does anyone know the name.

Thinking of Hot Doug’s, probably. Famous for their ever changing menu of game sausage and duck fat fries. Long lines almost always.
There’s also Hot Doug’s though their website doesn’t list everything.
There’s also Franks and Dogs, on Clybourn.
If you go out west, this yakitori restaurant has: Peacock, Iguana, Venison, Alligator, Buffalo, Wild boar, Kangaroo, Swan, Cocoon, and [del]Lion[/del]*.
*Damn hippie protestors.

Long lines that are absolutely worth it.
Franks and Dawgs is a little more exotic and gimmicky, menu-wise (still good, though).
Doug’s is near perfection. His famous Foix Gras dog seems like an obvious example of overdone foodie nonsense, but it is absolutely amazing.

Hot Doug’s being within walking distance of my home, I’m there probably more oftener than I should be. There is indeed always - I mean, always - a line, and his hours are short, but the line moves quickly. I don’t think I’ve ever waited more than 25 minutes, and that’s on Duck Fat Fries days (Friday and Saturday). Weekdays, he knows he’s doing a lunch service for ComEd, Lane Tech and DeVry, and that he has to get 'em in and out, and that’s exactly what he does. So don’t let the line scare you - this is one of the few times it really is worth it, and it’s not as bad as it looks…the line outside is actually twice as long as the line inside, 'cause there’s not a lot of extra room inside.
And if one line at Hot Dougs werent enough for you, head one long block west to Honey Butter Fried Chicken. The sides are so so but the smoked paprika dusted chicken is awesome.
