I suddenly have a hankering for rice pudding. Alas I have never made it before so have no idea what’s the best recipe or method. I’ve looked through my classic cookbooks i.e. Joy of Cooking, Best of Bridge, Canadian Living etc. and now I’m just confused. I’ve got it in my head to do a baked one with raisons. Delia Smith looks about right, has anyone made it? I’d appreciate any and all the rice pudding advice and recipes you might have.
OK here is my recipe - if you don’t like nutmeg you can use cinnamon instead.
RICE PUDDING (BAKED)
2 c water
1/3 c raisins
1 c uncooked white rice
3 eggs, beaten
2 c milk
1/2 c white sugar
1 t vanilla extract
1/2 t salt
1/4 t ground nutmeg
Soak raisins in the water for 1 hour. Drain the water into a saucepan and set the raisins aside.
Place rice in the saucepan with the water. Bring to a boil. Reduce heat, and simmer for 25 to 30 minutes.
Preheat oven to 325 degrees F
In a large bowl, combine eggs, milk, sugar, vanilla, and salt. Mix well. Stir in rice and raisins. Pour into a good size baking dish. Mine is kinda like a loaf pan, but a little bigger.
Bake uncovered for 30 minutes; stir and sprinkle with nutmeg (or grate nutmeg over the top if you have fresh). Bake additional 30 minutes or until a knife inserted comes out clean.
Buy some Carnation Evaporated Milkand check the side of the can, or the website. Easy and delicious.
Still hunting for the perfect rice pudding recipe; have done a lot of experimenting and come away dissatisfied. Will check this thread for salvation.
Experiment with different dried fruits, too! I love the traditional raisin recipes, but I made one with dried apricots once that was divine! The dried pineapple and coconut* one…not so hot.
