A last summer BBQ last weekend netted me a surplus of grilled corn, some grilled onions and two grilled tomatoes. Leftovers. So … Salsa!
I have the veggie prepped, and will add cilantro, lime juice, and maybe a splash of olive oil before serving. However, (wo)man cannot live on salsa alone. So what should I do with it? I’m leaning toward simple nachos or quesadillas, but I’m open to snazzy ideas!
This morning, I heated a pair of corn tortillas on the skillet, set them on a plate, and spooned some salsa over them; I then fried up two eggs, over medium, melted some shredded cheddar/jack combo over them, laid them on the tortillas, added another spoonful of the salsa, and called it huevos rancheros.
Mine was a mango salsa, but I can’t see why roasted corn salsa shouldn’t work just as well.
Two words: fish tacos. Get some tilapia/halibut and marinate in lime juice/olive oil/ cumin/ chili powder and either grill or pan fry. Serve with the salsa and maybe some sour cream and hot sauce.
Shoot, y’all, I was just gonna go with quesadillas, but both of those ideas sound GOOD! I do believe I have tilapia in the freezer, too …
