They wouldn’t make it if they thought it might be bad for business. If they think the customers will cheer them on, then they’ll sacrifice a customer like SHS. That’s what makes this dangerously close to pandering.

That would actually be fine. You are allowed to discriminate against someone for that reason too. I think it would be odd, but it would not be illegal.
But, she is not an actor, she is a spokesperson for this administration. She is not acting, she really is lying and misleading the public. She really is representing a real administration, she’s not an actor on The West Wing.
I’m not fond of her either, although she does have a certain obstinate composure that her predecessor, Sean Spicer, lacked. I think that’s why people maybe liked Spicer more—they could see he was acting and didn’t really believe what he was saying. Sarah Sanders is an actor too, I’d say, but a more convincing one. I wonder how she sleeps herself with kinds of bullshit policies she has to defend. It still rubs me the wrong way if someone is going to be deliberately prejudiced toward her or any other celebrity they don’t like though. People may cheer the restaurant owner now, but those cheers may also come back to bite them.

I think she believes in some things she says, but I also think she says a lot of things she does not believe. Which is a key reason why some people dislike her so much, because they criticize her integrity.

You still haven’t shown how SHS being an asshole exceeds the restaurant owner’s right to refuse service to anyone (when not based on SHS belonging to a protected class).
No cite necessary. It’s common sense that whenever you bar a customer, you risk shooting yourself in the foot. If your customers agree, then you’re in the clear, though you always risk alienating others. Shooting yourself in the foot is an analogy, by the way, for some that don’t quite understand metaphorical language.

Being an asshole generally isn’t an in-the-moment thing. Acting LIKE an asshole is.
Ms Sanders clearly has never worked in a restaurant, otherwise, she would be aware of the ways in which kitchen staff express their political or social anger.
Was SHS doing either of these things?
Was the kitchen staff all Democrats? Are you suggesting they might, say, spit in the food? Don’t you think other customers might also be concerned if that were to happen?
